Corn Dip
This corn dip is super addictive.. It is creamy, cheesy, tangy, and packed with flavor in every single bite. It’s loosely inspired by elote (Mexican street corn), which I love because I love anything salty and limey above all. This dip brings all those flavors together in the easiest, most satisfying way. Add a quick squeeze of lime on top before serving and it’s truly next-level.
I first made this for a movie night with friends, and now it’s my go-to for taco night, game days, and pretty much any time I want something warm and comforting to share.
Corn dip with tortilla chips
Ingredients:
2 cans (15 oz each) sweet corn, drained or 1 bag of fire-roasted corn
1/3 cup sour cream
1/3 cup cream cheese
1/2 cup cottage cheese (consider Good Culture brand; if using another brand, increase both sour cream and cream cheese to 1/2 cup each)
2 tablespoons Everything But the Elote seasoning (from Trader Joe's)
1 tablespoon chili-lime seasoning
1/2 cup shredded mozzarella (for topping)
Fresh lime wedges (for serving)
salt and pepper to taste
Corn tortilla chips (recommend Siete Lime Corn Tortilla Chips, but any kind works)
*A Quick Note on the Corn
If you can find fire-roasted corn, go for it. If not, you can make your own by tossing the drained corn into a hot skillet with some avocado oil or ghee and cooking it until the edges get brown and charred. This makes it so much more delicious and really makes it taste like elote.
Instructions:
Preheat your oven to 420°F.
In a large mixing bowl, combine the sour cream, cream cheese, and cottage cheese until mostly smooth.
Stir in the corn, Everything But the Elote seasoning, and Tajín. Taste and adjust seasoning if needed with salt and pepper
Transfer the mixture to an oven-safe dish and smooth out the top.
Sprinkle the mozzarella evenly over the top.
Bake for 15 to 20 minutes, or until the cheese is melted, golden, and bubbly.
Squeeze fresh lime juice over the top just before serving.
Serve warm with your favorite tortilla chips.
This dip is easy, and you really get the biggest flavor payoff for very minimal labor! It's perfect to make ahead and just pop in the oven when your guests arrive. Whether you are watching a movie, hosting taco night, or hanging out with friends during the game, this dip is guaranteed to disappear fast.
Storage Tip:
Store any leftovers in the fridge for up to four days. Reheat in the oven or microwave until warm and gooey again.
